THE HOOKER

1 oz Bourbon

0.5 oz Averna Amaro

0.5 oz Fresh Orange Juice

0.25 oz Ardberg Single Malt Scotch

1 Large Egg White

3 Dashes Boker’s Bitters or Ango

2 Dashes Chocolate Bitters

2 oz Strong Dark Ale (Maudite or similar)

Add all ingredients (excluding the dark ale) into a cocktail shaker. Add ice and shake vigorously to chill. Strain into a chilled coupe glass. Top with the ale and give a light stir.
