Pesca Spritz

1.5 oz Hammerling’s Undivided Light Vermouth

0.5 oz Peach Syrup*

0.25 oz Lemon Juice

Top with Hammerling’s Sparkling Wine (2oz-ish)

Garnish: Lemon Twist

Combine ingredients into a cocktail shaker (excluding the sparkling wine). Add ice and shake vigorously to chill. Strain into a wine glass over fresh ice. Top with sparkling wine. Garnish with a thyme sprig and lemon wheel

*Peach Syrup:

1 Cup Sliced, Peeled Peaches

1 Cup of Raw Sugar

1 Cup of Water

Combine water, sugar, and peaches into a saucepan and bring to a simmer over medium to high heat. Slightly mash the peaches to break them up more. Maintain a gentle simmer, and occasionally stir for 10 minutes. The sugar should be completely dissolved. Remove from heat and let it cool to room temperature. Fine-strain into an airtight container and store in the refrigerator. (Good for about 3-4 weeks)
